Our Craft
Chillo Collection is a small family business, proudly established in 2022, with a hands-on approach to every bottle we create. At Chillo Collection, we love the craft of making liqueurs and the way this special tradition brings family and friends together. There’s something magical about sharing a drink that’s been made with care, quality ingredients, and attention to detail.
Inspired by the much-loved Italian limoncello, we set out to create our own take using traditional methods and Australia’s finest fruit. The result is the Chillo Collection: a handcrafted range of small-batch liqueurs including our signature Limoncello, Mandarincello, Limecello and Strawberrycello.
Each flavour captures the essence of real fruit, made with no added colours or flavours, just honest ingredients and time-honoured techniques. Whether you serve them neat from the freezer, mixed into cocktails, or drizzled over desserts, Chillo Collection is designed to make every moment feel a little more special.

How We Make It
True quality takes time. Our traditional production process spans weeks, not days, ensuring every bottle meets our exacting standards.
Step 1
Select Premium Fruit
We start with the finest citrus, carefully selected for their aromatic oils and perfect ripeness. Each fruit is inspected by hand to ensure only the best make it into our production process. The quality of our ingredients directly impacts the final taste.
Step 2
Hand Peel the Zest
Using traditional techniques, we peel each lemon to extract only the outer zest, This labour-intensive process ensures we capture the pure, aromatic oils that give our limoncello and other products its distinctive bright flavour.
Step 3
Slow Infusion
The peeled zest is slowly infused in premium neutral spirit, allowing the natural oils to fully extract. We monitor each batch carefully, testing regularly until we achieve the perfect balance of flavour and aroma that defines our signature taste.
Step 4
Perfect Balance
The final step is where art meets science. We carefully blend the infused spirits with sugar syrup to achieve the perfect sweet-tart balance. Each batch is taste-tested multiple times before bottling to ensure consistency and excellence.
